This is my favourite way to switch up breaking my fast as winter sets in. I love a plant rich green soup and generally just grab whatever needs eating.
This recipe is my batch cook for the first few days of next week and takes just 10 minutes to make🌿
- sweet potatoes, aubergine & broccoli lightly steamed
- turmeric and zaatar to taste
- 400ml coconut milk
- blend…
- add a little cider vinegar if needed
Then when you want to eat, simply heat, stir in 2 x tablespoons of Meno-Boost, garnish with some crunchy roasted chickpeas (I’ve cooked these with a little paprika and cumin) and torn basil and enjoy🌿
