This recipe is an adaptation from the brilliant Happy Pear and has been a huge hit in our household. I hope you enjoy it too.
Makes c.12 squares with c.25-50g of protein per portion
- 120g pumpkin seeds
- 50g hemp seeds
- 140g pea protein
- 40g of almond flour
- 3 tablespoons of coconut oil
- 120g of smooth peanut butter
- 6-8 squares of dark chocolate (70%+)
- A little sea salt to taste
Instructions:
1. Put your pumpkin and hemp seeds in a blender and pulse until broken down, but still a little bit of bite.
2. Transfer to your electric mixer. Add your pea protein and flour and mix all dry ingredients fully.
3. Place your coconut oil in a pan and heat. When fully melted, take off the heat and add your peanut butter. Stir until blended.
4. Pour your oils over your dry ingredients and mix. The ingredients should form a dry-ish dough that holds.
5. If it is too crumbly, you can add a tablespoon or two of plant-based milk or water.
6. Line a freezer-friendly square tin with parchment paper
7. Put your dough in the centre of the tin and cover with another sheet of parchment paper
8. Use a rolling pin to shape the dough into a square that fills the square / or is at a thickness you want for your bar.
9. Gently slice your dough into the number of portions you wish to make whilst it is still soft. I aim for 12 which will deliver c.25g of protein per serve.
10. Place tin in freezer for 10-15 minutes to firm.
11. Whilst waiting, melt your chocolate squares in a bowl over a pan of bubbling boiling water.
12. Taking your tin out of the freezer, transfer the contents onto a cooling rack using the parchment paper and gently separate the squares along the score lines you made.
13. Take your chocolate and use a spoon to drizzle over the individual slices.
Sprinkle with a little sea salt.
14. Finally, lift the squares onto a plate using the baking parchment again. And place it in the fridge to set fully.
Once chocolate is hard, transfer to a tupperware container and keep in the fridge for up to 7 days.
